Chef de Latour

Chef Jean Paul Lourdes' globally inspired, seasonally focused cooking is taking Restaurant Latour in an exciting and radical new direction. The chef has re-imagined the dining experience to be a tantalizing progression of flavors and techniques. Diners can choose from either the Farmer’s Feast, a vegetable-centered meal, or Grazing, which is protein-driven, as either a 5 or 7 course tasting menu. The design of the dinner menu includes a panel showcasing the ingredients that will be served during the month, with the day’s menus reflecting what ingredients are of the highest quality at the moment. All of these travels and the groundbreaking chefs he has worked under have formed the foundation for an adventurous, creative style of cooking. But under the surface you will find that Lourdes is more than a chef, having been a professional rugby player, a holder of a Master of Science in Food Science and Nutrition, a children’s book author and perfume designer. VP of Hospitality & Lodging and Wine Director

Robby Younes, who holds the position of VP of Hospitality and Lodging as well as Wine Director at Crystal Springs Resort, is a versatile industry expert with a strong background in international fine dining and wine.

Robby’s experience and management training from the Waldorf Astoria, and exclusive dining rooms in the Starwood and Hilton chains, have prepared him for his dual roles as Vice President and Wine Director at the Resort. He has attained Sommelier certification, as well as membership to the exclusive Les Chevaliers du Grand Vin..

Sommelier Susanne Lerescu

Susanne Lerescu, Sommelier for the Wine Cellar at Crystal Springs, has nearly 30 years of a strong professional background in the hotel and restaurant industries. She received her initial training at the Hotel Management School in Bad Reichenhall, Germany (her native country), followed by a 3 year apprenticeship. Susanne departed Germany to excel in various sommelier and restaurant positions throughout Europe. She came to the U.S. in 1992 and held supervisory roles with Sheraton hotels for 7 years.
